This recipe can be a BBQ hit! But out of the BBQ season it makes an awesome oven roasted dish that have just the perfect Kombucha Twist on it.
1 orange pepper, in chunks
1 red pepper, in chunks
1 yellow pepper, in chunks
1 medium red onion, sliced
2 small zucchini, in rounds
1 yam, in rounds
4 tbsp virgin olive oil
½ cup of Lemongrass Kombucha Tea
Sea salt and fresh ground black pepper to taste
Combine all ingredients in a resealable bag. Marinate in the fridge for 12 hours.
Preheat oven at 375ºF.
Pour into a high-sided baking dish and bake on the centre rack until the vegetables are tender, approximately 45 minutes.
